Blueberry Pie Smoothie

I made it through my three nights on…cheers for me!!

After getting my rest, I was up and at ’em.  It was another beautiful, sunny day so Kimm and I bundled up (I mean, it IS still winter), leashed up Izzy and headed out for a walk.  Again, it is just SO nice to be out in nature.  I tried taking a few pictures but my phone tells me there is no room.  Oh boy, there is a project for this weekend…delete stuff on my phone to make more room!

Dinner was good — quesadillas again for Kimm and I made a warm rice salad with broccoli, celery, sesame seeds, and chickpeas that I am going to tweak the recipe just slightly and then post here.

After dinner French and blog reading and FB stalking 🙂

Now we are about to watch a couple of episodes of Switched at Birth…can’t wait.  And with it, our snacks…Kimm is of course doing popcorn and I will be having what I’ve been having for the past few nights…a blueberry smoothie that truly does taste like blueberry pie!  I had done some “Pinteresting” earlier this week and found a few recipes for Blueberry Pie smoothies and I morphed the ideas into the perfect smoothie for me.  Even Kimm agrees…it REALLY does taste like blueberry pie!  You can’t go wrong with something that is incredibly healthy for you, yet tastes like a decadent dessert!

Blueberry Pie Smoothie

Ingredients:

1/4 cup walnuts

1/3 cup frozen blueberries

1 frozen banana

1 cup almond milk (I use unsweetened, you can also use any other milk product here)

dash cinnamon

2 ice cubes

To make:

Blend all except ice cubes in a high-powered blender (ex: Vitamix, Ninja, etc) until very smooth, about 1 minute.  Then add 2 ice cubes and blend until incorporated (mixing until really smooth will warm up the ingredients of the smoothie…it won’t be hot or anything — more like room temp — but I just find I like it better when it is colder, so the ice cubes at the end just bring it back to a nice cold temperature…it is best to blend until really smooth because blueberries take a while to break down!)

ENJOY!!!  It is the walnuts and cinnamon that work to give this smoothie the hints of “pie” 🙂

I love it!!

Next week I’m going to attempt a carrot cake smoothie…can’t wait for the adventure!
