Today we celebrated our labor day with a picnic with Kimm’s family, aka my second family 🙂
My contribution…brownies! And not just any brownies…literally the BEST brownies. I dug up this recipe from an old blog post back in 2013! They really are still my favorite brownies…dense, fudgy, moist. Today I made it without the walnuts just because her family doesn’t like them as much as we do, but they are great with or without. Oh yeah, and I DOUBLED the recipe so we would have plenty of leftovers (put in a 9 x 13 pan, and the bake time went up to about 35 minutes).
Without further ado, here’s the recipe…
The BEST Brownies
1/2 cup vegetable oil
1 cup white sugar
1 tsp pure vanilla extract
1/2 cup all-purpose flour
1/3 cup unsweetened cocoa powder
1/4 tsp baking powder
1/4 tsp salt
1/2 cup walnuts, chopped
1/2 cup milk chocolate chips
Pre-heat oven to 350 degrees.
Spray 8 x 8 pan with baking spray.
In large bowl, mix oil, sugar, vanilla, and eggs.
In medium bowl, mix flour, cocoa, baking powder, and salt.
Add dry ingredients to wet ingredients and mix.
Stir in walnuts and chocolate chips.
Spread evenly in pan. Bake 25-30 minutes until brownies start to pull from edge of pan and when toothpick inserted into middle of brownies comes out dry.
Cool and enjoy!!!
Seriously…these were SOOOO good. We had to be extra good and just take home two each for us when we left, otherwise we could have eaten them all!
We got over to Kimm’s parents house about 3:15 pm. We ate by 5 pm — veggie burgers with cheese, baked beans (me!!), potato salad, pasta salad, grilled veggies, raw veggies with dip, chips with dip. There were also deviled eggs and cream cheese stuffed celery (I did not partake…I was stuffed as it was!) Everything was SO yummy!
Of course after eating I got SO sleepy. And as usual, I fell asleep on the couch while everyone was talking…I guess it is my M.O. 🙂
However, I did wake up to make a s’more…again, SO good…reminded me of when I was home with my parents in May and we had them around the fire pit.
The rest of the night was more chatting and catching up (and another cat nap for me!). We were home by about 11pm. Believe me, bed felt SO good as this was later than our normal bed time!
