Mom’s Apple Crisp

The last day of February!

Tomorrow is March which means we are THAT much closer to spring 🙂

My first night of work was okay…lots of running around but the walking is good for me.

Last night and tonight we got to enjoy some great apple crisp that I made with some apples Kimm’s mom gave me.  I used my mom’s apple crisp recipe which is so simple, yet SO YUMMY!

Mom’s Apple Crisp

Makes: 8 small or 4 large servings

Time to prep: 20 minutes

Time to cook: 1 hour

Ingredients:

Filling…

Enough sliced apples to fill an 8 x 8 glass pan (I would say about 4-5 large apples or 8-9 small apples)

Scant 1/4 cup white sugar

1/2 cup water

Crisp topping…

1 cup white sugar

3/4 cup white flour

4 tablespoons butter, softened

dash cinnamon

To make:

Pre-heat oven to 350 degrees.

Spray 8 x 8 glass pan with non-stick spray.

Peel and slice enough apples to fill pan.

Sprinkle scant 1/4 cup white sugar over sliced apples, and then pour over 1/2 cup water.

Make topping by mixing together softened butter, sugar, flour and cinnamon until crumbly.

Sprinkle topping over apples.

Bake in oven for one hour.

Cook and enjoy!!

**Note: my mom usually makes a 9 x 13 size pan for this amount of topping but I LOVE the topping so much I use this much topping for a 1/2 batch!

Seriously this is THE BEST apple crisp…Kimm agrees 🙂

Today is almost done and then it is back to work….sad face!

It was nice to get out of the house today and do some stuff even if it wasn’t much.  I think I have cabin fever 🙂  It was even better that the sun was out in full force!!

So what did we do??

–First we went to Home Depot to pick up some more sand.  We used up our entire 50 lb bag of sand that we bought at the beginning of the winter…that just tells you how much ice we’ve had–TOO MUCH 🙂  Of course where did they keep the sand in this particular Home Depot–outside, with all the garden stuff…we were navigating ice and freezing to boot!  But we got the sand.

–Then we went out to Best Buy to look at laptops.  Whoa.  What an experience.  First of all, did you know that most laptops these days don’t come with a DVD optical drive??  “Because most everything is digital today” is the answer I got when I inquired why.   Boy do I feel old.  I found a few laptops that I am considering but I can’t say I’m IN LOVE with any of them.  First of all…most of them are so UGLY…you would think with the amount of designers out there, they could make a sleek, nice-looking laptop.  For what I want (processor, RAM, hard drive, size) I guess I’m pretty picky.  I’m going to keep looking.  Keep on working old laptop!

–Then on to the main event — lunch at El Forestero (tortilla chips with salsa and guacamole, veggie quesadillas, rice and beans and fried ice cream for dessert).  Holy Goodness — we were SO FULL when we left! (and we have leftovers for tonight!)

–Last stop to Stop and Shop to pick up a few necessities for the remainder of the month (bread, cream) and some appetizers which we are going to have Sunday night just because!

Back home we basically chilled.  Tonight we are heading out to pick up some free movie tickets from our realtor (he is doing an event where he pays for a free movie…we can’t go tonight because I have to work but we will go at some point).

There may have to be a nap at some point before work 🙂

Good stuff that happened today–

…I made an apple crisp with my Mom’s recipe using up some older apples that Kimm’s mom gave us–the house smelled heavenly!

…I watched the first episode of Survivor Season 30!

…we headed out to Barnes and Noble for an impromptu trip

…we got pizza on the way home and watched some Last Man Standing while eating

Not-so-good stuff that happened today–

…our garage door did NOT get fixed (it was all set to get fixed somewhere between the hours of 12 noon and 3 p but then it got canceled because the guy who does it got stuck up in New Haven….so now it is rescheduled for next Wednesday at 9 am…that’s great but now we are expected to get anywhere from 2-5 inches of snow on Sunday into Monday night)

…Kimm had a somewhat negative experience at her doctor’s appointment (this was a new doctor because her insurance does not cover who she had before…she had high hopes for this doctor because she had linked an article to her description page talking about using de-stressing techniques to deal with medical issues…however, at the appointment she immediately focused in on Kimm’s slightly high blood pressure and cholesterol and asked if she could put her on meds…Kimm of course said no because she was “not interested in pumping her body full of chemicals to fix a problem that could be solved via other means” and then the doctor countered with “are you interested in having a heart attack?” — WHAT!!!????  Talk about bad bedside manner!  Even if she felt medication was the best option, there was definitely a better way to introduce it…especially at a first meeting!!!!  What is going on with healthcare these days???!!!)

I REALLY wish that time went by a little bit slower on my nights off 🙂

I love the fact that I am off and that I can spend time doing what I want and not worrying about having to go into work, but it just goes by WAY TOO FAST!!!

That is all.  Now off to watch some fun TV with my love.

Thankfully I am feeling much better physically today.   It’s no fun not feeling well.

Last night at work was also much better…busy but not crazy busy…spaced out and manageable.

The cold is still bitter and not much fun.

My last night on tonight and it’s with my co-supervisor so it should make for an easier night as long as I am not needed to be a nurse on any unit (the staffing has been tight lately).

We finally had cheeseburger salad tonight and it was YUMMY!!

The night has slipped away from me again…time for my shower.

So glad that I will have OFF tomorrow!!!!

Stomach bug?

I’m not really sure what is going on, but my stomach has been off since last night before work.  I barely ate anything at work and yet I felt awful.  Once I got home this morning I just brushed my teeth and went to bed.  Thankfully I was able to sleep pretty well.

My stomach felt a bit better when I got up but I just made a simple meal (veggie burger and rice) and that settled pretty good.

My fingers are crossed that this won’t repeat at work tonight.

We’re back in the negative degrees…UGH!!!  I HATE THE COLD!!!

Also, the garage door finally stopped working (a little over two weeks since they came and fixed it before).  So now we are scheduled to get a new garage door opener this Thursday.  There goes another $500!

Time to get ready for work…I’m looking forward to that hot shower 🙂

We’re having a heat wave…

The temps hit the 30s today and it was SUNNY!!!  Completely makes me have spring fever a little bit more 🙂

But before all that we had to deal with snow blowing and shoveling 6 inches of heavy snow this morning…booo!  The worst was in front of the house by the mailbox.  Digging through all the stuff the plow left (about 2-3 feet high is NO FUN).  And there is NO WHERE TO PUT THE SNOW…lots of lifting and carrying down the street.  It was a full body workout that’s for sure.

We were up shoveling pretty early too because we had an event to get to…Drag Brunch at a restaurant in Holyoke.  One of the radiologists that works at the hospital who I am friends with — her girlfriend moved here over a year ago and does drag…she finally got into her first show in MA.  She did great!!!  There were five performers in all — all the others were drag queens (males performing as females) and boy did they get into their performances!   Lots of laughing involved.  The brunch included was okay…the best items were the waffles and the muffins and the cookies…the drinks were outrageously expensive – $8 for a glass of wine!!!  But the company (lots of work friends) was good 🙂  There’s another one in two months and we’re thinking of going back.

The rest of the afternoon went by WAY too fast.  Kimm shoveled up a bunch of water that has melted since it’s supposed to get very cold again tonight…so it will all freeze.  We both did our French.  I caught up on Facebook and read some blogs.

We’re getting pizza out…we’re just lazy today 🙂  And then the days off are done and I’m back to work tonight.

Why do those days off go by so fast?

The BEST thing about my days off is when I can just sit, quietly, with my eyes closed and DO NOTHING 🙂

Seriously!!

Even though I didn’t get a ton of stuff done today, it was a good day.

First of all, we slept in…VERY nice!

I changed the bed sheets and dusted and swept the bedroom…all clean until another two weeks.

After lunch we headed over to Kimm’s parents’ house…I caulked their downstairs shower (using silicone caulk which I have never used before…good to use around bathrooms because it is 100% water proof…VERY smelly to use).  Izzy came with us and loved seeing Grandpa Phil and Grandma June 🙂  While we were there it started to snow…it was pretty coming down.  We are due to get anywhere up to 6 inches by morning.

We heated up pizza for dinner along with some curly fries and watched our last Chopped 😦   Which reminds me, we watched our last Switched at Birth last night…I’m going to miss watching that show!

Right now I’m mostly closing my eyes and relaxing which I love!  But the beeper for the dryer went off and so I’ll have to make my way down to fold the sheets soon…

It was the same at the hospital last night…still very busy.  Every single bed was taken up and we still had three more patients that had to be held over in the ED in the morning to be admitted until patients were discharged.

The weather is still the same…cold and windy.  I’m SO ready for some nicer weather.  At least the days are getting longer!

My computer is still making the same noises…but so far still working 🙂

I’m so happy tonight is my last night on.  I’ve been sleeping pretty poorly the last few days and I could use some extra rest.
